Janet and Bill Butler had no delusions of grandeur when they moved to Whitehall Wisconsin from Upstate New York. Their reason was a simple one – quality of life and to produce organic sheep’s milk cheese.
Butler’s Farm is a small, family-run business that produces some of this country’s best artisanal cheeses. They farm a small herd of 85 ewes that produce milk for their cheeses from late Spring until early Fall. The whey from their cheese production is fed to their small herd of pigs that also graze on the pastures of their farm. Because Janet and Bill have consciously maintained their farm as a small, seasonal producer, Butler’s Farm cheeses are available to only a limited Wisconsin market.
Join us for this special dinner honoring Janet and Bill of Butler’s Farm and the fruits of their labor. Chef Stowel and Chef Hamilton will be creating a special six-course menu featuring lamb and hogs from their farm, and their artisanal Brebis, Feta, Aged Tomme, Templemore, Clonboo, Bandit, Ricotta and Mascarpone cheeses. All courses will be specially paired with wine and beverages.
